Wages, costs, and many POS systems have shifted toward 20% as the typical "good service" tip. It is also clean math: subtotal × 0.20.

Sit-down service: 18–20% is normal, 20–25% for great service. Bartenders: $1–$2 per drink or 20%.

Common practice is to tip on the pre-tax subtotal, but tipping on the total is fine too — the difference is small.
